Butter making

At Hauxley Farm we have been making butter for 8 years. We are one of only two farms in Northumberland making Farm House Butter on site with cream from our own herd of cows.

We started out making butter as cream unbelievably was a waste product. We sell some as pints of cream. However with all the skimmed and semi skimmed milk we sell. We could not sell enough cream to use it all up. Obviously no one likes waste so this had to be put to use.

This is our original butter churn with a crate for reference to it's tiny size. This butter churn took 10 litres of cream and was back breaking work having to fill it with water and empty it to wash the butter. This butter churn lasted really well and has just been replace this year. With this machine it took 2 or 3 batches to get 20 - 40 blocks of butter.

This is our new butter churn. Purchased earlier this year. It has taken a little bit of getting used to. We now consistently make around 70 blocks of butter per session and thats with the machine just working at half capacity.

This butter churn can take upto 100 liters of cream. I have included the same crate for reference to the difference in size.

Now of course with the new machine came a whole new set of issues. We can now consistantly make more butter than we can sell. Hence the next idea to make flavoured butter.

We have just recently launched two new ranges of butter, Garlic & Herb also Sundried Tomato & Basil. These we are making in 100g blocks and freezing immediately so that we can preserve the freshness and sell in the vending machines and on the rounds with the maximum use by date. The butter is being defrosted in small batches ready to go on sale. So far the response from customers has been outstanding we are consistanly selling both new types of butter and the feedback is out of this world. All customers have been delighted with the flavour and consistency of the butter.
